Dried products such as snacks and crisps are typically packed in 100% nitrogen so that this to reduces the oxygen content in the pack to low levels. In this way, shelf life can be extended to 2 years in some cases.
With such long shelf lives however, it is essential to use low permeability packaging
films to stop the ingress of oxygen and the outward transport of water vapour if the
consumer is to receive a product fit for consumption.
Ensuring good seal integrity and low levels of oxygen in the pack are critical HACCP“s.
