Ready Meals
Typical Cook-Chill products have a shelf life of between 2 -5 days, which can be doubled to 4 – 10 days by the use of Modified Atmosphere Packaging (MAP).
The constituent parts of ready meals vary widely, but are typically packed in a CO2 / N2 mix, removing the oxygen necessary for microbial growth and causing spoilage.
Maintaining good seal integrity during a production run is frequently made more difficult by seal contamination caused by product sauces dripping onto the seal area, and here thorough quality pack leak detection is a critical part of the HACCP.
